Cho Ichi Ramen was a passion project over 20 years in the making. Ramen lovers themselves, Cho and Tracy dreamt of opening a ramen shop, but knew they had to perfect their recipes and techniques first.

After finding success with Wasabi and Chosabi, Cho and Tracy were able to enlist the help of a veteran ramen maker from Japan to pass along the knowledge, traditions, and techniques of the trade. One of their biggest takeaways was the importance of consistency, which you’ll notice if you’re ever lucky enough to witness their noodles being made as those responsibilities live with only two people to ensure every bowl of ramen is the same.

Armed with the wisdom on how to make the perfect broth and handmade ramen noodles, Cho and Tracy were finally able to fulfill a 20-year dream when Cho Ichi Ramen opened in 2018. 

Cho Ichi Ramen features homemade broths and ramen noodles  — made daily in-house — with a collection of traditional ramen styles alongside their own takes on the Japanese staple and innovative tapas-style dishes remixed from other classic Asian dishes.
